Karen Garinger's Fried Rice

1 Cup long grain rice

1 Onion Chopped

1 Egg

1 to 1-1/2 Cup Bean Sprouts

Soy Sauce

1 8 oz. Can mushroom pieces**

3 Chinese Sausage*

3 Green Onions

3 Slices Bacon

1 Can Water Chestnuts**

Steam rice in usual fashion and set aside to cool.  Beat egg and cook into thin sheets in a large frying pan using a small amount of margarine.  Slice/chop egg and set aside.  Wash and thin slice green onions (bulbs and stems) and set aside with egg.  Cut bacon in small pieces and fry in pan.  Add sliced Chinese sausage and cook until fat on sausage is transparent.  Drain off excess fat.  Add onions to meat mixture and continue cooking.  When onions are partially cooked, add other vegetables and continue cooking.  Add rice and mix thoroughly.  Splash in a small amount of soy sauce and mix until rice is lightly brown (a little goes a long way).  Just before serving mix in egg and green onions. 

*Chinese sausage is available at Asian markets.  I use Wing-Wing brand but there are several brands available.

**Use or omit as you choose – mushrooms (fresh or canned), water chestnuts, bamboo shoots, baby corn or anything else that strikes your fancy.
